While the conventional oven in your kitchen probably only reaches 500 or 550 degrees Fahrenheit, pizza ovens need extreme heat for fast dough rise times and optimal crust aging. You can expect a good outdoor pizza oven to reach 900 to 950 degrees Fahrenheit, but you can still get leopard-spotted Neapolitan pizzas charred at 700 to 750 degrees Fahrenheit.

How fast do pizza ovens cook?

Since most pizza ovens run at insane heat, cooking times are FAST. We’re talking start to finish in as little as 60 seconds up to minutes. You certainly won’t have time to insert your pizza and scroll through TikTok while you wait for it to cook. Cooking with a pizza oven requires special attention due to the fast cooking times, and you’ll also need to learn how to manage your oven’s heat while you prepare it.

Gas or wood-fired pizza oven

Most outdoor pizza ovens on the market run on wood or propane gas, with a few natural gas options. A wood burning stove will give you an amazing smoky taste, but it takes more work to keep a fire going while you cook. Gas stoves, on the other hand, don’t offer the same smoke, but are generally easier to manage and can easily be preheated before cooking. Gas pizza ovens also keep the temperature stable with little fluctuation.

How we tested

We tested each of the pizza ovens on this list, and each was chosen because they had more than four stars and were from brands well-known for making high-end pizza ovens and other kitchen essentials. . . We mostly stuck to wood-fired and gas-fired pizza ovens with a selection of a model suitable for indoor use, but stayed away from pizza ovens that didn’t reach at least 700 degrees.

Some factors we considered when testing were:

Ease of use and learning curve: Trying out a pizza oven as a novice is not for the faint of heart. We tested gas, wood-fired and electric ovens to see how difficult they were to use and maintain heat while cooking. We also cooked several types of pizza and non-pizza dishes in each oven to see how they performed at high temperatures.

Fuel type: We compared the performance of each type of fuel, in particular noting the differences for ovens that use both gas and wood.

Temperature: Using built-in or external thermometers, we tested the temperature of each oven and saw firsthand how heat affects pizza making.
